Blender Chocolate Fudge Pie

This is one of those go-to recipes I use over and over. For two reasons--one, it's easy. And two, it's delicious. How can you beat that? Especially when all you need to do is toss all the ingredients in a blender and whir them up. This recipe makes two pies, so you can eat one tonight and stick the other in the freezer.

2 1/2 cups sugar
1/2 cup cocoa
4 eggs
1 1/4 cups evaporated milk
1 tbsp vanilla
1 stick butter, melted
2 8” inch pie shells

Preheat oven to 350 degrees. Put first 6 ingredients into blender and mix well. Pour into uncooked pie shells and bake for 30 minutes. Remove from oven while center is still jiggly. Let cool and then refrigerate. Great with Cool Whip!
