I invented this recipe after I looked in the fridge and noticed a pack of cole slaw that was a few days away from expiring and a jar of opened pasta sauce that was close to doing the same thing. I pulled some other ingredients out of the pantry and discovered a family favorite. This soup is delicious! It just goes to show you that some of the best recipes are more inventions than anything else. So if you have some leftovers hanging out in the fridge, have fun with them!
1 small pack of cole slaw (in the produce section)
1 onion, chopped
2 cloves garlic, minced
3 Tbsp extra virgin olive oil
1 (32 oz.) box chicken broth
1 (26 oz) jar tomato-based pasta sauce
1 small pack frozen spinach, defrosted with all liquid squeezed out
1 lb. Italian sausage (or veggie replacement)
salt, pepper, and desired seasonings
Sautee cole slaw, onion, and garlic in the olive oil over medium heat until softened. Add remaining ingredients and let it cook on low to medium heat for about thirty minutes. Here’s a tip: Add the pasta sauce before the chicken broth. Then you can put some of the broth in the jar to rinse out the remaining sauce. Get every little bit!!
