Zucchini Fritters

The summer bounty is on its way. And if you are a gardener, then you know that a few zucchini seeds in the spring are good for sacks and sacks of zucchini in the summer. If you are wondering what to do with all of that surplus squash (and if your neighbors are starting to lock the door and turn off the lights when they see you coming with another bag), then why not try out this recipe? We prepared these this week and everyone—yes, everyone—in the family loved them!

2 1/2 cups grated zucchini (excess moisture squeezed out)
1 egg, beaten
2 Tbsp butter, melted
1 1/2 cups breadcrumbs
1/4 cup minced onion
1 tsp Old Bay Seasoning
1/4 tsp seasoned salt
1/4 cups all-purpose flour for coating
1/2 cup vegetable oil for frying

1. In a large bowl, combine zucchini, egg, butter, and seasoning. Stir in breadcrumbs and onion. Mix well.
2. Shape mixture into patties and coat with flour.
3. In a medium frying pan, heat oil over medium heat and then fry patties until they are golden brown on both sides.
You can serve these with an herbed yogurt sauce, but when it comes to kids, nothing beats good old ketchup!
